on-the-go breakfast: pine pollen & cacao chia seed pudding

It feels like ages since I’ve posted a recipe doesn’t it?!

But my dry spell is over and I’ve developed a healthy on-the-go breakfast option that I think you all are going to love.

Filled with super-foods like pine pollen, cacao and maca powder this chia seed pudding has balanced nutrition, easily digestible protein and  will give you that much needed burst of energy to get you through your morning.

Ingredients:

  • 1/2 cup coconut milk
  • 1/4 cup coconut water
  • 2 tbsp chia seeds
  • 1 tbsp cacao powder
  • 1.5 tsp pine pollen (I like to use this brand)
  • 1 tsp maca powder (or mesquite powder)
  • 1 tsp pure vanilla
  • Dash of cinnamon
  • wild blueberries (for layering)

Directions:

  • Mix all ingredients in a bowl and refrigerate overnight. At this point it’ll be lumpy, but that’s ok! It’ll take on a pudding-like texture once the chia seeds expand
  • In the morning create your on-the-go breakfast by layering the chia seed pudding with wild blueberries (or any fruit of your choice) in a glass mason jar
  • Top it off with more berries and cacao nibs (or whatever else you want)
  • Enjoy!
