Happy Galentine’s Day blushers!

What’s Galentine’s Day? It’s only the best day of the year! It’s ladies celebrating ladies.

So, in celebration of my best lady friends, and all the women who inspire me, I whipped up a batch of vegan dark chocolate truffles to enjoy with a bottle of bubbly.

These truffles are quite rich and delicious and make the perfect treat to reward yourself for being so awesome

galentine’s day vegan dark truffles

ingredients (makes 17 large truffles):


  1. In a medium-sized saucepan, melt the chocolate chips on the lowest heat, stirring frequently.
  2. Add the cream from the top of the can of coconut milk and mix it into the melted chocolate.
  3. Stir in the vanilla, salt, maple syrup and whisk until smooth.
  4. Scoop mixture into a bowl and place in the freezer for 30 mins.
  5. Take it out of the freezer and stir with a spoon to break up the hardened spots; then place in the fridge for 45 mins to firm up some more.
  6. Once firm, shape mixture with fingers into 1.5″ balls (it’s a little messy so if you have plastic gloves I’d recommend wearing them). If the mixture is too sticky return it to the fridge for a bit longer.
  7. Roll into the cacao powder.
  8. Store any uneaten truffles in fridge for next time!
